- 1 cup breadcrumbs
- 1 egg
- 1/2 cup diced onion
- 2 cloves garlic, minced

- 1 cup enchilada sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ground beef, breadcrumbs, onion, garlic, egg, chili powder, cumin, salt, and pepper in a large mixing bowl. Mix until well incorporated.
- Shape the mixture into meatballs, about one inch in size, and place them on a lined baking sheet.
- Bake for about 25 minutes or until cooked through and slightly golden.
- Drizzle the meatballs with enchilada sauce and return them to the oven for an additional 5-10 minutes.
- Serve garnished with fresh cilantro and a drizzle of sour cream.
Notes
