Description

A flavorful and refreshing twist on traditional tacos transformed into a delightful salad, perfect for any gathering.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, fresh or canned
  • 2 cups romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Start by gathering all your ingredients and setting your cooking area. Chop the onion, mince the garlic, and dice the avocado so everything is ready to go. Preheat a large skillet over medium heat and add the olive oil.
  2. Once the oil is hot, add in the chopped onion and sauté for 2-3 minutes, until tender and translucent. Then, add the minced garlic and ground beef, breaking it up with a spatula as it cooks. After the beef is browned and cooked through, stir in the taco seasoning along with a splash of water to help distribute the flavors evenly. Cook for another 2-3 minutes until everything is well combined.
  3. Now it’s time to assemble your taco salad bowls! Start with a generous base of chopped romaine lettuce in each bowl, then layer the seasoned ground beef, black beans, corn, cherry tomatoes, diced avocado, and shredded cheese. Finish with a dollop of salsa and sour cream on top. Arrange garnishes artistically for a colorful presentation that you’ll be proud to share!

Notes

Feel free to customize your taco salad with additional ingredients like jalapeños, bell peppers, or quinoa. For a vegan option, use lentils or plant-based crumbles instead of ground beef.
