1 medium sweet potato (about 1 cup when cooked and mashed)
1 can (15 oz) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup chopped red onion
1 clove garlic, minced
1 teaspoon cumin
1 teaspoon smoked paprika
Salt and pepper to taste
1/4 cup fresh cilantro, chopped (optional)
1/2 cup mayonnaise (for chipotle mayo)
1 tablespoon chipotle in adobo sauce (for chipotle mayo)
Juice of 1 lime (for chipotle mayo)
Instructions
Start by preheating your oven to 400°F (200°C). Roast that sweet potato whole for about 45 minutes or until fork-tender. Let it cool, then peel and mash it.
In a large mixing bowl, combine the mashed sweet potato and the black beans. Use a fork to mash the beans a bit, but leave some whole for added texture.
Add in the breadcrumbs, chopped red onion, minced garlic, cumin, smoked paprika, salt, pepper, and optional cilantro. Mix until everything is well combined.
Form the mixture into patties, about 1/2 inch thick. You should get about 4-6 burgers, depending on how generous you want to be.
In a non-stick skillet over medium heat, add a drizzle of olive oil. Once hot, cook the patties for about 4-5 minutes on each side until they’re golden brown and crispy.
Meanwhile, prepare the chipotle mayo by mixing the mayonnaise, chipotle in adobo, and lime juice in a small bowl.
Serve your burgers on toasted buns, generously topped with chipotle mayo and any favorite garnishes.
