Ingredients

  • ½ cup of unsalted butter, cold and cubed
  • ¼ cup of granulated sugar
  • ¼ teaspoon of salt
  • 1 tablespoon of cold water
  • 2 cups of blackberries
  • 1 tablespoon of cornstarch
  • ½ teaspoon of almond extract
  • 1 egg (for wash)

  • Instructions

  • In a large mixing bowl, combine the flour, sugar, and salt. Add the cold, cubed butter. Use a pastry cutter or your fingers to cut in the butter until the mixture resembles coarse crumbs.
  • Gradually add the cold water, mixing gently until the dough just comes together.
  • Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • In another bowl, combine blackberries, cornstarch, and almond extract. Gently toss until the berries are well coated.
  • On a lightly floured surface, roll the chilled dough into a rough circle about 12 inches in diameter.
  • Transfer the rolled dough onto a baking sheet lined with parchment paper. Mound the blackberry mixture in the center, leaving about a 2-inch border. Gently fold the edges of the dough over the filling, pinching to secure.
  • Beat the egg and brush it over the crust. Bake in a preheated 375°F (190°C) oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
  • Once out of the oven, let your galette cool for at least 10 minutes before slicing.
