1 ½ cups of all-purpose flour
½ cup of unsalted butter, cold and cubed
¼ cup of granulated sugar
¼ teaspoon of salt
1 tablespoon of cold water
2 cups of blackberries
1 tablespoon of cornstarch
½ teaspoon of almond extract
1 egg (for wash)
Instructions
In a large mixing bowl, combine the flour, sugar, and salt. Add the cold, cubed butter. Use a pastry cutter or your fingers to cut in the butter until the mixture resembles coarse crumbs.
Gradually add the cold water, mixing gently until the dough just comes together.
Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
In another bowl, combine blackberries, cornstarch, and almond extract. Gently toss until the berries are well coated.
On a lightly floured surface, roll the chilled dough into a rough circle about 12 inches in diameter.
Transfer the rolled dough onto a baking sheet lined with parchment paper. Mound the blackberry mixture in the center, leaving about a 2-inch border. Gently fold the edges of the dough over the filling, pinching to secure.
Beat the egg and brush it over the crust. Bake in a preheated 375°F (190°C) oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
