- 4 cups diced cooked chicken (leftover rotisserie chicken works great)
- 4 large potatoes, peeled and sliced thinly
- 2 cups shredded cheddar cheese
- 1 cup ranch dressing
- 1 cup buffalo sauce (adjust according to your spice preference)
- 1/2 cup chopped green onions (for a fresh finish)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Prepare your work area and make your potato slices uniform for even cooking.
- Combine in a large mixing bowl the cooked chicken, ranch dressing, buffalo sauce, garlic powder, and onion powder. Mix until the chicken is well-coated.
- Grease a 9×13 inch baking dish and layer half of the potato slices evenly across the bottom. Follow with half of the chicken mixture, then half of the shredded cheese. Repeat the layers with the remaining potatoes, chicken mixture, and finish with the last of the cheese.
- Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes until the top is bubbly and golden.
- Cool for a few moments before serving to help it set. Consider serving in individual portions.
Notes
For added flavor, a sprinkle of fresh cilantro or parsley on top is recommended. Optionally, serve with a drizzle of extra ranch dressing.
