Description

A hearty pot of Cajun White Chicken Chili that blends tender chicken with creamy white beans and vibrant spices, perfect for cozy family dinners or festive gatherings.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers (red and green), diced
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 2 cups chicken broth
  • 2 (15-ounce) cans white beans (cannellini or navy), drained and rinsed
  • 1 can diced green chiles
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup heavy cream (or coconut milk for a dairy-free version)
  • Chopped green onions and cilantro for garnish

Instructions

  1. Gather all your ingredients and prepare them for cooking. Dice the onions and bell peppers, mince the garlic, and shred the cooked chicken.
  2. Heat the olive oil over medium heat in a large pot. Add the diced onions, bell peppers, and minced garlic, sautéing until soft and fragrant for about 5-7 minutes.
  3. Stir in the shredded chicken, chicken broth, white beans, diced green chiles, Cajun seasoning, oregano, salt, and pepper. Bring to a simmer and let cook for about 20-30 minutes.
  4. Adjust seasonings as needed, adding cayenne pepper if desired for more spice.
  5. Stir in the heavy cream and allow it to heat through for another 5 minutes.
  6. Serve in bowls garnished with fresh cilantro and sliced green onions.

Notes

For a dairy-free option, substitute heavy cream with coconut milk. Customize with optional ingredients like corn or jalapeños for added flavor.
