- 4 chicken thighs (bone-in, skin-on)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 lemon (juiced)
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup seasonal vegetables (like carrots, potatoes, or bell peppers)
- Chopped fresh parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 425°F (220°C) and pat the chicken thighs dry with paper towels.
- Combine garlic powder, onion powder, salt, pepper, paprika, and thyme in a bowl and rub into the chicken.
- Heat olive oil in a cast-iron skillet over medium-high heat. Place chicken skin-side down and sear for 5-7 minutes until golden brown.
- Turn the chicken over, drizzle with lemon juice, and cook for another minute.
- Transfer the skillet to the oven and roast for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes. Serve garnished with parsley and lemon wedges.
Notes
Leftovers can be stored in the refrigerator for up to 3 days. For a leaner version, use skinless chicken breasts.
