Ingredients

  • 1 large head of cauliflower, chopped into bite-sized florets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 68 small corn or flour tortillas
  • 2 cups green cabbage, thinly sliced
  • 1 cup carrots, shredded
  • ½ cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons mayonnaise (or vegan alternative)
  • Sriracha sauce (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Chop your cauliflower into bite-sized florets, spread on a baking sheet, drizzle with olive oil, and sprinkle with spices. Toss to coat.
  2. Roast the cauliflower for 25-30 minutes until golden brown, tossing halfway through. Meanwhile, prepare the slaw by mixing cabbage, carrots, cilantro, lime juice, and mayonnaise in a bowl.
  3. Warm the tortillas on a skillet, then fill with roasted cauliflower and top with cabbage slaw. Serve garnished with your choice of toppings.
