Ingredients

Scale
  • 2 cups of fresh cherries, pitted and halved
  • 1/4 cup of granulated sugar
  • 1 tablespoon of cornstarch
  • 1 teaspoon of almond extract
  • 1 tablespoon of lemon juice
  • 1 sheet of puff pastry (thawed if frozen)
  • 1 egg (for egg wash)
  • A pinch of salt
  • Optional: Chopped almonds or slivered almonds
  • Optional: Powdered sugar for serving
  • Optional: Vanilla ice cream or whipped cream
  • Special Garnish: Fresh mint leaves
  • Special Garnish: Drizzle of honey

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare the filling: In a mixing bowl, toss together your pitted cherries, sugar, cornstarch, almond extract, lemon juice, and salt. Let this sit for about 10 minutes.
  • Roll out the pastry: On a lightly floured surface, roll out your puff pastry sheet into a rough circle, about 12 inches in diameter.
  • Transfer the pastry to a parchment-lined baking sheet, leaving some space around the edges.
  • Spoon the cherry mixture into the center of the pastry, leaving a generous 2-inch border.
  • Fold the edges of the pastry over the cherry filling, pleating it as you go.
  • Brush the crust with the beaten egg for a glossy finish.
  • Bake in the oven for about 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  • Let it cool for a few minutes before slicing.
  • Slice and serve with your desired garnishes.
  • Notes
