Ingredients
Scale
2 cups of cherries, pitted and halved
2 cups of peaches, peeled and sliced
1 cup of granulated sugar
1 teaspoon of vanilla extract
1 cup of cornmeal
1 cup of all-purpose flour
1 tablespoon of baking powder
½ teaspoon of salt
½ cup of unsalted butter, melted
1 cup of milk
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the pitted cherries and sliced peaches. Add ½ cup of sugar and vanilla, and gently toss until the fruit is well-coated. Let this sit for about 10 minutes to draw out the juices.
In another bowl, mix together the cornmeal, flour, baking powder, and salt. Whisk everything together until well combined. Stir in the melted butter and milk until just combined.
Pour the batter into a greased 9×13-inch baking dish, then spoon the fruit mixture on top. Do not stir the layers together.
Bake for about 45-50 minutes, or until the top is golden brown and a toothpick comes out clean.
Let the cobbler cool for about 15 minutes before serving.
