Ingredients

  • 1 cup rolled oats
  • 1/4 cup dried cherries
  • 1/4 cup almond butter
  • 1/4 cup flaxseed meal
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup shredded coconut (optional)

Instructions

  1. Gather all ingredients. Soak dates in warm water if they are tough.
  2. Combine the pitted dates, rolled oats, dried cherries, almond butter, flaxseed meal, vanilla extract, and cinnamon in a food processor. Blend until clumping.
  3. Form small balls (1 inch diameter) from the mixture and place them on a parchment-lined plate. Roll in optional garnishes if desired. Chill for 30 minutes before serving.
