Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until fluffy and light in color.
- Add the eggs one at a time and vanilla, mixing until combined.
- Whisk together the flour, baking soda, salt, ground cinnamon, and oats in a separate bowl.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the diced apples and nuts if using.
- Drop heaping tablespoons of dough onto prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on the sheet for a few minutes before transferring to a wire rack.
