Description
A vibrant Chicken Cobb Salad made with mixed greens, grilled chicken, crispy bacon, and fresh toppings, perfect for any spring gathering.
Ingredients
Scale
- 4 cups mixed salad greens (such as romaine, spinach, and arugula)
- 2 cups cooked chicken breast, diced or shredded
- 4 strips of crispy bacon, chopped
- 2 ripe avocados, diced
- 2 hard-boiled eggs, chopped
- 1 cup cherry tomatoes, halved
- ½ cup crumbled blue cheese
- ¼ cup red onion, finely diced
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper, to taste
Instructions
- Start by gathering all your ingredients and washing your greens thoroughly. Chop your cooked chicken into bite-sized pieces and prepare the bacon by cooking until crispy, then chopping it into small pieces. Keep your salad greens and toppings separate until you’re ready to serve to maintain freshness.
- In a large mixing bowl, combine the salad greens and toss them with olive oil and red wine vinegar, seasoning with salt and pepper to taste. Start layering in the chicken, bacon, diced avocados, chopped eggs, cherry tomatoes, crumbled blue cheese, and red onion. Toss gently to combine.
- To assemble, consider using a large serving platter for a stunning presentation. Arrange the mixed ingredients artfully and serve with an extra side of dressing on the table.
