- 2 tbsp Taco Seasoning
- 2 cups Red Cabbage, shredded
- Juice from 2 limes
- 1 medium Onion, thinly sliced
- 8 Corn Tortillas

- Chili Powder (to taste, optional)
- ¼ cup Cotija Cheese, crumbled (optional)
- Cilantro Sprigs (for garnish)

Instructions
- Begin by gathering all ingredients. Slice the onion and add to a bowl with lime juice for pickling for at least 30 minutes. Meanwhile, shred the red cabbage and season with lime juice, salt, and pepper.
- Trim the chicken thighs of excess fat and cut into bite-sized pieces. In a skillet, heat oil and add the chicken, sprinkling taco seasoning over it. Cook until browned and cooked through, about 5-7 minutes.
- Warm the corn tortillas in a separate pan or over an open flame.
- Assemble your tacos with seasoned chicken, red cabbage slaw, and lime-pickled onions. Top with avocado, cilantro, and Cotija cheese. Serve with lime wedges.
