  • 2 tbsp Taco Seasoning
  • 2 cups Red Cabbage, shredded
  • Juice from 2 limes
  • 1 medium Onion, thinly sliced
  • 8 Corn Tortillas
  • 1 Avocado, sliced (optional)
  • Chili Powder (to taste, optional)
  • ¼ cup Cotija Cheese, crumbled (optional)
  • Cilantro Sprigs (for garnish)
  • Radishes, thinly sliced (for garnish)

Instructions

  1. Begin by gathering all ingredients. Slice the onion and add to a bowl with lime juice for pickling for at least 30 minutes. Meanwhile, shred the red cabbage and season with lime juice, salt, and pepper.
  2. Trim the chicken thighs of excess fat and cut into bite-sized pieces. In a skillet, heat oil and add the chicken, sprinkling taco seasoning over it. Cook until browned and cooked through, about 5-7 minutes.
  3. Warm the corn tortillas in a separate pan or over an open flame.
  4. Assemble your tacos with seasoned chicken, red cabbage slaw, and lime-pickled onions. Top with avocado, cilantro, and Cotija cheese. Serve with lime wedges.
