- 1 ½ cups fresh peaches, diced
- ½ cup plain Greek yogurt
- ¼ cup mayonnaise
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar

- 4 large lettuce leaves (such as Romaine or Butter Lettuce)
- ¼ cup chopped fresh basil (optional)
- ¼ cup chopped pecans or walnuts (optional)
- Whole grain wraps or tortillas (for serving)
Instructions
- Begin by gathering all your ingredients and ensuring the chicken is cooked and shredded. If you haven’t cooked the chicken yet, poach or grill it until fully cooked through. Let it cool, and then shred it with two forks. Dice the peaches and chop any optional ingredients you’re including. Prepare your selected wraps or tortillas to hold the salad.
- In a large mixing bowl, combine the shredded chicken, diced peaches, Greek yogurt, mayonnaise, honey, apple cider vinegar, and Dijon mustard. Stir until everything is evenly coated. Taste and adjust seasoning with salt and pepper as desired. If you’re adding in any optional ingredients like nuts or basil, fold them in gently.
- Lay the large lettuce leaves flat and spoon an equal amount of the peach and chicken salad mixture into the center of each leaf. Wrap tightly, folding the edges in to encase all the goodness. For serving, consider cutting the wraps in half diagonally for a beautiful presentation. Arrange them on a platter and sprinkle extra chopped basil on top for visual appeal.
