Ingredients
- Shrimp (12 oz, peeled and deveined)
- Rice paper wraps (8 pieces)
- Lettuce leaves (4 large)
- Cucumber (1 medium, julienned)
- Carrot (1 medium, julienned)
- Red bell pepper (1 small, sliced)
- Fresh herbs (1/2 cup, basil, mint, or cilantro)
- Peanut dipping sauce (1/2 cup)
Instructions
- Start by cooking your shrimp. If using raw shrimp, boil them for about 2-3 minutes until they turn pink and opaque, then let them cool. You can also use pre-cooked shrimp for convenience. Slice your vegetables into thin strips and prepare your herbs by washing and drying them well. For a smoother rolling process, have a shallow dish with warm water ready to soften the rice papers.
- Once everything is prepared, it’s time to assemble the rolls. Dip each rice paper wrap in the warm water for about 10-15 seconds or until it softens—take your time! Lay the softened rice paper on a clean surface. Start layering the ingredients: place a lettuce leaf, add a few pieces of shrimp, then top with cucumber, carrot, red bell pepper, and fresh herbs. Be careful not to overfill, as it may lead to messy rolls.
- To roll, start from the bottom (where your filling is), fold the sides over, and then roll tightly to enclose the filling. When serving, arrange the rolls on a platter, and slice them in half for an inviting presentation. Serve with the peanut dipping sauce and a few lime wedges on the side.

These rolls are best enjoyed fresh. If you have leftovers, store them in an airtight container in the refrigerator for up to 24 hours. For the best results, keep the dipping sauce separate until you’re ready to enjoy them.
