- ¾ cup granulated sugar

- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk (or substitute with milk + vinegar)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. You may sauté the cherries briefly to unlock their juices.
- Mix the melted butter and brown sugar in a bowl until well blended. Pour this mixture into your greased cake pan and arrange the halved cherries on top.
- Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in another bowl. In a separate bowl, combine the granulated sugar, eggs, and vanilla extract until fluffy. Gradually mix in the dry ingredients alternately with the buttermilk.
- Pour the batter over the prepared cherry layer and smooth the top. Bake for 30 to 35 minutes or until a toothpick comes clean from the center.
- Cool the cake in the pan for 10 minutes, then flip it onto a plate to release it from the pan.
Notes
Consider serving with whipped cream or chocolate sauce and try substituting regular milk with almond milk for a dairy-free version.
