Ingredients

  • ½ cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk (or substitute with milk + vinegar)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. You may sauté the cherries briefly to unlock their juices.
  2. Mix the melted butter and brown sugar in a bowl until well blended. Pour this mixture into your greased cake pan and arrange the halved cherries on top.
  3. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in another bowl. In a separate bowl, combine the granulated sugar, eggs, and vanilla extract until fluffy. Gradually mix in the dry ingredients alternately with the buttermilk.
  4. Pour the batter over the prepared cherry layer and smooth the top. Bake for 30 to 35 minutes or until a toothpick comes clean from the center.
  5. Cool the cake in the pan for 10 minutes, then flip it onto a plate to release it from the pan.

Notes

Consider serving with whipped cream or chocolate sauce and try substituting regular milk with almond milk for a dairy-free version.
