- 4 cups fresh blackberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, softened
- 3/4 cup milk
- 1/2 teaspoon vanilla extract
- Additional sugar for sprinkling on top
Instructions
- Preheat your oven to 350°F (175°C). Rinse blackberries under cool water and pat dry.
- Combine the blackberries with sugar, lemon juice, cornstarch, and vanilla in a bowl. Toss gently and set aside.
- Whisk together flour, baking powder, and salt in another bowl. Cut in softened butter until it resembles coarse crumbs.
- Mix milk and vanilla in a small bowl, then stir into dry ingredients until just combined.
- Pour the blackberry mixture into a greased 9×13 inch baking dish, and spoon the topping over the berries.
- Sprinkle a little sugar on top, then bake for 30–35 minutes, until golden brown and bubbly.
- Serve warm, ideally with vanilla ice cream.
Notes
For a delicious twist, consider adding a pinch of cinnamon or nutmeg to the filling. Serve with whipped cream or ice cream for extra indulgence.
