Description

Ingredients

  • 4 cups fresh blackberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 3/4 cup milk
  • 1/2 teaspoon vanilla extract
  • Additional sugar for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C). Rinse blackberries under cool water and pat dry.
  2. Combine the blackberries with sugar, lemon juice, cornstarch, and vanilla in a bowl. Toss gently and set aside.
  3. Whisk together flour, baking powder, and salt in another bowl. Cut in softened butter until it resembles coarse crumbs.
  4. Mix milk and vanilla in a small bowl, then stir into dry ingredients until just combined.
  5. Pour the blackberry mixture into a greased 9×13 inch baking dish, and spoon the topping over the berries.
  6. Sprinkle a little sugar on top, then bake for 30–35 minutes, until golden brown and bubbly.
  7. Serve warm, ideally with vanilla ice cream.

Notes

For a delicious twist, consider adding a pinch of cinnamon or nutmeg to the filling. Serve with whipped cream or ice cream for extra indulgence.
