- 4 boneless, skinless chicken breasts
- 2 ripe peaches, diced
- 1 can (13.5 oz) coconut milk
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions
- Start by gathering all your ingredients. Preheat your skillet or grill to medium-high heat. Dice the peaches, mince the garlic, and ginger. Pat the chicken breasts dry with a paper towel, then season generously with salt and pepper.
- Heat the olive oil over medium-high heat. Add the chicken breasts, searing them for 6-7 minutes on each side until golden brown. Add garlic and ginger in the last couple of minutes.
- Pour in the coconut milk and diced peaches, stirring gently. Let it simmer on low heat for about 10 minutes, stirring occasionally.
- Plate the Coconut Peach Chicken on a serving platter, spoon some sauce over the chicken, and scatter fresh basil leaves on top. Serve with jasmine rice or quinoa.
Notes
For added heat, include a pinch of red pepper flakes while cooking. Store leftovers in an airtight container for up to 3 days.
