Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
  2. Combine the canned pumpkin, vegetable oil, granulated sugar, and brown sugar in a large bowl. Whisk until smooth, then add the eggs one at a time, mixing well after each addition.
  3. Sift the flour, baking soda, baking powder, spices, and salt together in a separate bowl. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
  4. Beat the softened cream cheese, sugar, egg, and vanilla extract in another bowl until creamy and well combined.
  5. Pour half of the pumpkin batter into the prepared loaf pan, followed by the cream cheese mixture. Spread it evenly, then top with the remaining pumpkin batter, swirling gently with a knife.
  6. Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
