Description

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Fresh basil (for garnish)

Instructions

  1. Season both sides of the chicken breasts with salt and black pepper. In a large skillet over medium-high heat, add the olive oil and allow it to heat until shimmering.
  2. Cook the chicken breasts for about 6-7 minutes per side until golden brown and fully cooked through. Remove the chicken from the pan and set it aside.
  3. Add minced garlic to the same pan, sautéing until fragrant, about 30 seconds. Stir in the sun-dried tomatoes and heavy cream, mixing well to combine.
  4. Pour in chicken broth and Italian seasoning, allowing the sauce to come to a gentle simmer, stirring regularly.
  5. Add the fresh spinach and let it wilt in the sauce before returning the chicken to the skillet.
  6. Serve by placing the chicken back in the skillet, spooning the creamy sauce over the top. Garnish with fresh basil and a sprinkle of Parmesan cheese.

Notes

Consider adding red pepper flakes for heat or artichoke hearts for a Mediterranean flavor. Store leftovers in an airtight container for up to 3 days.
