Instructions
- Begin by gathering all your ingredients to ensure a smooth cooking process. Chop the onion and mince the garlic. Consider mashing some cannellini beans for a creamier texture. Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, add the diced onion. Sauté for 3-4 minutes until translucent. Then, add the minced garlic and red pepper flakes. Stir constantly to avoid burning, cooking until fragrant (about 1 minute). Next, stir in the cannellini beans, vegetable broth, and dried oregano. Allow to simmer for 5-7 minutes.
- Slowly pour in the heavy cream and bring to a gentle boil. Add the fresh spinach and mix until wilted, about 3-4 minutes. For a thicker sauce, let it simmer longer.
