  • Salt and pepper to taste
  • 1 tablespoon olive oil

  • Optional: A sprinkle of lemon zest

  • Instructions

  • Start by washing your zucchinis thoroughly. Slice off the ends, then cut them into long, even sticks.
  • Pat the zucchini sticks dry with paper towels to ensure maximum crisp during air frying.
  • In one bowl, beat the egg. In another, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Dip each zucchini stick into the egg, letting the excess drip off. Then roll it in the breadcrumb mix until coated evenly.
  • Set your air fryer to 400°F (200°C) and preheat for about 5 minutes.
  • Arrange the zucchini fries in the air fryer basket in a single layer and spray lightly with olive oil.
  • Cook for about 10-12 minutes, flipping halfway through until golden brown and crispy.
  • While cooking, combine mayonnaise with a squeeze of lime juice, dash of hot sauce, and a pinch of salt for the spicy mayo.
