- 1 cup panko breadcrumbs

- 2 large eggs, beaten
- 1 tablespoon garlic powder

- 1/2 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- Lime wedges and fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the salmon by cutting it into bite-sized pieces and removing any pin bones.
- In a bowl, mix flour, salt, pepper, garlic powder, and paprika.
- Beat the eggs in a separate bowl.
- Place panko breadcrumbs in another bowl.
- Dredge each salmon piece in flour mixture, shaking off the excess.
- Dip into the beaten eggs, and then coat thoroughly with panko breadcrumbs.
- Arrange the breaded salmon bites on the prepared baking sheet.
- Bake for 12-15 minutes or until golden brown and cooked through.
- Combine sweet chili sauce, soy sauce, and honey in a saucepan and simmer until slightly thickened.
- Drizzle the glaze over the baked salmon bites and serve with cilantro and lime wedges.
