Ingredients
Scale
2 large russet potatoes
2 tablespoons of olive oil

Instructions
Wash the potatoes thoroughly and slice them thinly (about 1/16 inch) using a sharp knife or a mandoline.
Soak the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch.
Drain the potatoes and pat them dry. Combine the potato slices with olive oil, vinegar, and sea salt in a mixing bowl and toss gently.
