Ingredients
Scale
- 2 pounds baby potatoes
- 4 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh herbs (optional), such as rosemary or thyme
Instructions
- Preheat your oven to 450°F (230°C) and wash the baby potatoes thoroughly. Place them in a large pot with cold water and salt. Bring to a boil, then reduce to medium heat and cook until fork-tender, about 15-20 minutes. Drain the potatoes and let them cool slightly.
- Smash each potato on a parchment-lined baking sheet using a plate or flat object. Drizzle olive oil over them, then sprinkle with garlic powder, salt, and pepper. Bake for 20-25 minutes until golden brown and crispy, optionally broiling for the last 2-3 minutes.
- Serve warm, garnished with fresh herbs or Parmesan cheese.
Notes
Use organic potatoes for the best flavor. Adjust garlic to taste for a stronger flavor profile.
