Ingredients

  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup cocoa powder
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. Whisk together flour, sugar, cocoa, baking powder, baking soda, cinnamon, and salt in a bowl.
  4. Mix oil, pumpkin puree, eggs, and vanilla in another bowl.
  5. Pour wet ingredients into dry and stir until combined.
  6. Fold in chocolate chips.
  7. Spoon batter into muffin tins, filling each cup three-quarters full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
