Description

A decadent and moist double chocolate zucchini bread with rich cocoa and hidden vegetables, perfect for dessert or snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini
  • 1 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  3. Combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract in another bowl, whisking until smooth.
  4. Gradually stir in the grated zucchini into the wet mixture.
  5. Fold the dry ingredients into the wet mix until just combined, being careful not to overmix.
  6. Fold in the chocolate chips.
  7. Transfer the mixture to the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
