Ingredients

  • 2 cups of Greek yogurt
  • 12 tablespoons of honey
  • 1 teaspoon of vanilla extract
  • 1/2 cup of shelled pistachios
  • 1/4 cup of dried fruit (cherries, cranberries, etc.)
  • Fresh berries (optional)
  • Coconut flakes (optional)
  • Dark chocolate chips (optional)
  • Chopped mint leaves (optional)

  • Instructions

  • In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Give it a good stir until it’s well mixed and luscious.
  • Get a baking sheet (with a rim) and line it with parchment paper.
  • Pour the yogurt mixture onto the prepared baking sheet, spreading it out to about 1/4 inch thick.
  • Sprinkle the shelled pistachios and any additional toppings evenly across the yogurt mix.
  • Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until solid.
  • Once frozen, take it out and let it sit for a few minutes at room temperature. Then, break it into pieces.
  • Serve immediately or keep it in an airtight container in the freezer.
