2 cups of Greek yogurt1–2 tablespoons of honey1 teaspoon of vanilla extract1/2 cup of shelled pistachios1/4 cup of dried fruit (cherries, cranberries, etc.)Fresh berries (optional)Coconut flakes (optional)Dark chocolate chips (optional)Chopped mint leaves (optional)
In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Give it a good stir until it’s well mixed and luscious.Get a baking sheet (with a rim) and line it with parchment paper.Pour the yogurt mixture onto the prepared baking sheet, spreading it out to about 1/4 inch thick.Sprinkle the shelled pistachios and any additional toppings evenly across the yogurt mix.Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until solid.Once frozen, take it out and let it sit for a few minutes at room temperature.
