Description

A hearty and comforting soup inspired by the classic flavors of stuffed cabbage, perfect for chilly evenings.


Ingredients

  • 1 large head of cabbage, cored and chopped
  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 6 cups beef broth (or vegetable broth for vegetarian)
  • 1 cup uncooked rice (white or brown)
  • 1 tablespoon brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare your ingredients—core the cabbage, dice the onion, and mince the garlic.
  2. Heat a drizzle of olive oil in a large soup pot over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent—about 3-5 minutes.
  3. Add in the ground beef, breaking it apart as it cooks until browned.
  4. Stir in the cabbage, rice, crushed tomatoes, beef broth, brown sugar, Worcestershire sauce, smoked paprika, thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 40 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary, then serve hot, garnished with fresh parsley and optionally a dollop of sour cream.

Notes

For a lighter version, use ground turkey or plant-based meat. You can customize the soup by adding carrots or bell peppers.
