Ingredients

1 cup of all-purpose flour
2 tablespoons of sugar
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of Greek yogurt
1/2 cup of milk
1 large egg
1 teaspoon of vanilla extract
2 tablespoons of unsalted butter, melted
Instructions
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the Greek yogurt, milk, egg, vanilla extract, and melted butter. Whisk until smooth.
Gently fold the wet ingredients into the dry ingredients until just combined. Let the batter rest for about 5-10 minutes.
Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter onto the skillet.
Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
Transfer cooked pancakes to a plate and keep warm. Repeat with remaining batter.
