Ingredients
Scale
4 ears of corn
1/2 cup unsalted butter, softened
1 tablespoon lime juice
1 teaspoon chili powder
Salt to taste
Cilantro, chopped (optional)
Instructions
Start by cooking your corn. Grill it directly on the barbecue or boil it in water for about 5-7 minutes until tender.
If grilling, preheat your grill to medium-high heat and place the corn on it, turning occasionally to get an even char. Cook for about 10-15 minutes.
While the corn cooks, combine the softened butter, lime juice, chili powder, and salt in a bowl. Stir until well blended and creamy.
Once the corn is done, take it off the grill (or from the pot if you boiled it) and spread the butter generously over each ear while it’s still hot.
Finish with a sprinkle of fresh cilantro or feta cheese if desired. Serve hot.
