Ingredients

  • 1 lb of flank steak
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Sesame seeds (optional)
  • Bell peppers or snap peas (optional)
  • Fresh cilantro (for garnish)
  • Extra pineapple slices (for garnish)

  • Instructions

  • In a bowl, whisk together the soy sauce, brown sugar, sesame oil, garlic, and ginger. Place the flank steak in a large zip-lock bag, pour the marinade over, seal it, and shake. Toss it in the fridge for at least 30 minutes (or up to overnight).
  • If you’re using day-old rice, ensure it’s less sticky. Heat a large pan over medium-high heat, add a tablespoon of vegetable oil, and toss in your rice, stirring to coat it and get it nice and hot.
  • Once the rice is heated, add minced garlic, salt, and pepper. Stir for about 30 seconds until fragrant.
  • Add another tablespoon of vegetable oil, and keep stirring the rice for about 4-5 minutes until it’s slightly crispy. Toss in the chopped green onions.
  • Preheat your grill to medium-high heat. Remove the flank steak from the marinade and discard it. Grill the beef for about 4-5 minutes on each side for medium-rare. Let it rest for a few minutes before slicing.
  • While the beef is resting, grill the pineapple chunks for about 2-3 minutes, just until they caramelize.
  • On a serving plate, create a bed of garlic fried rice, layer on the sliced grilled beef, and top with grilled pineapple chunks.
