Ingredients

1 lb of flank steak
½ cup soy sauce
¼ cup brown sugar
1 tablespoon sesame oil
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 cup pineapple chunks (fresh or canned)
2 cups cooked rice (preferably day-old)
2 tablespoons vegetable oil
2 green onions, chopped
Salt and pepper to taste
Sesame seeds (optional)
Bell peppers or snap peas (optional)
Fresh cilantro (for garnish)
Extra pineapple slices (for garnish)
Instructions
In a bowl, whisk together the soy sauce, brown sugar, sesame oil, garlic, and ginger. Place the flank steak in a large zip-lock bag, pour the marinade over, seal it, and shake. Toss it in the fridge for at least 30 minutes (or up to overnight).
If you’re using day-old rice, ensure it’s less sticky. Heat a large pan over medium-high heat, add a tablespoon of vegetable oil, and toss in your rice, stirring to coat it and get it nice and hot.
Once the rice is heated, add minced garlic, salt, and pepper. Stir for about 30 seconds until fragrant.
Add another tablespoon of vegetable oil, and keep stirring the rice for about 4-5 minutes until it’s slightly crispy. Toss in the chopped green onions.
Preheat your grill to medium-high heat. Remove the flank steak from the marinade and discard it. Grill the beef for about 4-5 minutes on each side for medium-rare. Let it rest for a few minutes before slicing.
While the beef is resting, grill the pineapple chunks for about 2-3 minutes, just until they caramelize.
On a serving plate, create a bed of garlic fried rice, layer on the sliced grilled beef, and top with grilled pineapple chunks.
