Scale
4 Mahi Mahi fillets (about 6 oz each)
2 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
Salt and pepper to taste
1 cup of cooked rice (jasmine or basmati)
1/2 cup of chopped fresh cilantro
Juice of 1 lime
1 ripe pineapple, diced
1 jalapeño, minced (optional)
1/4 red onion, finely chopped
1 tablespoon of honey (optional)
Instructions
Prepare the marinade: In a large bowl, whisk together olive oil, garlic powder, smoked paprika, salt, and pepper. Add the Mahi Mahi fillets, coating them thoroughly. Let them marinate for about 15-20 minutes.
Make the pineapple salsa: In another bowl, combine diced pineapple, jalapeño (if using), red onion, honey, and a squeeze of lime juice. Toss together and let it sit.
Cook the rice: While the fish marinates, cook rice according to package instructions. Fluff it with a fork and stir in chopped cilantro and lime juice.
Fire up the grill: Preheat your grill to medium-high heat.
Grill the fish: Place marinated Mahi Mahi fillets on the grill for about 4-5 minutes on each side.
