  • 1 cup of long-grain white rice (for coconut rice)
  • 1 cup of coconut milk
  • 1 cup of water
  • 1 avocado (sliced; optional)
  • Green onions (for garnish; optional)
  • Fresh lime wedges (for serving)
  • Extra cilantro (for garnish)

  • Instructions

  • Prep the Salmon: Start by patting the salmon fillets dry with a paper towel. Drizzle with olive oil, and season with salt, pepper, and lime juice on both sides. Set aside.
  • Make the Mango Salsa: In a medium bowl, combine the diced mango, chopped cilantro, red onion, lime juice, and jalapeño (if using). Mix gently and let the flavors mingle.
  • Cook the Coconut Rice: In a saucepan, combine the rice, coconut milk, water, and a pinch of salt. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 18-20 minutes.
  • Grill the Salmon: Preheat your grill or grill pan to medium-high heat. Grill the salmon for about 5-7 minutes on each side until it flakes easily and reaches an internal temperature of 145°F.
