Salt & Pepper to taste
1 tablespoon of lime juice
1 large mango (diced)
1/4 cup of cilantro (chopped)
1 small red onion (diced)
1 small jalapeño (minced; optional)
1 cup of long-grain white rice (for coconut rice)
1 cup of coconut milk
1 cup of water
1 avocado (sliced; optional)
Green onions (for garnish; optional)
Fresh lime wedges (for serving)
Extra cilantro (for garnish)
Instructions
Prep the Salmon: Start by patting the salmon fillets dry with a paper towel. Drizzle with olive oil, and season with salt, pepper, and lime juice on both sides. Set aside.
Make the Mango Salsa: In a medium bowl, combine the diced mango, chopped cilantro, red onion, lime juice, and jalapeño (if using). Mix gently and let the flavors mingle.
Cook the Coconut Rice: In a saucepan, combine the rice, coconut milk, water, and a pinch of salt. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 18-20 minutes.
