1 lb of boneless, skinless chicken thighs
1 cup of pineapple chunks
1 bell pepper (any color)
1 onion, cut into wedges
⅓ cup of soy sauce
⅓ cup of brown sugar
2 tablespoons of rice vinegar
2 teaspoons of garlic, minced
1 teaspoon of ginger, minced
Salt and pepper to taste
Instructions
In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, and ginger.
Cut the chicken thighs into large, bite-sized chunks.
Add the chicken to the marinade, tossing well to coat. Cover and let it sit for at least 30 minutes in the fridge.
Thread the marinated chicken, pineapple, bell pepper, and onion onto skewers, alternating between chicken and vegetables.
Preheat your grill to medium-high heat.
Place your kabobs on the grill, turning them every few minutes until the chicken is cooked through—about 10-12 minutes.
In the last few minutes of grilling, brush any leftover marinade over the kabobs.
Remove from the grill and let them rest for a couple of minutes before serving.
