Description

A delightful mix of fresh apple juice and blueberry puree to create healthier gummy snacks that are fun to make and delicious to eat.


Ingredients

  • Apple Juice: 1 cup (100% juice, no additives)
  • Blueberry Puree: 1 cup (fresh or frozen, blended until smooth)
  • Honey or Maple Syrup: 2-3 tablespoons (adjust for sweetness)
  • Gelatin: 2 tablespoons (unflavored)
  • Lemon Juice: 1 tablespoon
  • Water: 1/4 cup

Instructions

  1. Gather all your ingredients and prepare your baking dish or silicone molds by lightly greasing them.
  2. Use a blender to create a smooth blueberry puree and set it aside.
  3. In a mixing bowl, combine the apple juice, blueberry puree, honey or maple syrup, and lemon juice. Mix gently.
  4. Combine the water and gelatin in a small saucepan over low heat, stirring continuously until dissolved.
  5. Gradually add the apple and blueberry mixture to the saucepan, stirring as it warms.
  6. Pour the mixture into the molds or dish, filling them about three-quarters of the way full.
  7. Allow the gummies to cool at room temperature for about 30 minutes, then refrigerate for at least two hours.
  8. Once firm, carefully pop them out of the molds or cut into squares.

Notes

For a vegan option, replace honey with agave syrup. Ensure gelatin is gluten-free if needed.
