- ½ cup unsalted butter, cold and cubed
- 6–8 heirloom tomatoes, sliced
- 1 tablespoon olive oil
- ½ teaspoon fresh thyme leaves
- Egg wash (1 egg beaten with 1 tablespoon water)
- Crumbled goat cheese or feta (optional)
- A pinch of red pepper flakes (optional)
- Balsamic drizzle (optional)
- Fresh basil leaves (for garnish)
- Microgreens (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate.
- Slice heirloom tomatoes evenly, place in a bowl, drizzle with olive oil, add thyme, and toss. Let sit for about 10 minutes to release excess moisture. Roll out the chilled dough into a rough circle of about 12 inches in diameter and transfer it onto a lined baking sheet.
- Layer the seasoned tomato slices in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the tomatoes, creating pleats. Brush crust with egg wash and bake for 30-35 minutes, or until golden brown. Serve warm, garnished with fresh basil and balsamic if desired.
