Ingredients

2 large chicken breasts (about 1 lb)
1/4 cup honey
1/4 cup Dijon mustard
2 teaspoons olive oil
Salt and pepper to taste
4 large tortillas
2 cups mixed greens
1 cup shredded carrots
Optional: Avocado slices, Cherry tomatoes, Cheese (Feta or cheddar)
Special Garnishes: Chopped fresh herbs, Extra honey mustard drizzle
Instructions
Start by patting the chicken breasts dry, then season them with salt and pepper.
Add olive oil to a large skillet over medium heat. Once it’s shimmering, add the chicken breasts.
Sauté for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown.
While the chicken cooks, whisk together honey and Dijon mustard in a small bowl.
Once the chicken is done, remove it from the skillet and let it rest for a few minutes before slicing it thinly. Drizzle or toss the chicken in the honey mustard sauce.
Lay your tortilla flat, layer with mixed greens, shredded carrots, and sliced chicken. Roll it tightly.
Cut each wrap in half, arrange on a plate, and garnish with any extra goodies.
