- 1 large egg yolk
- 2–3 tablespoons ice water
- 1 cup almond flour
- ½ cup granulated sugar

- 2 large eggs
- 1 teaspoon almond extract
- ¼ teaspoon salt
- 2–3 ripe pears, peeled, halved, and thinly sliced
- 2 tablespoons honey
- Additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold cubed butter and use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs. In a separate bowl, whisk together the egg yolk and ice water. Gradually add this to the flour mixture, mixing until it forms a dough. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
- Prepare the frangipane filling. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, almond extract, and salt, mixing until well combined. Gently fold in the almond flour until fully incorporated.
- Roll out the chilled dough on a floured surface into a circle large enough to fit your tart pan. Carefully transfer the dough to the pan, pressing it into the edges and trimming any excess.
- Spread the frangipane filling evenly over the prepared tart shell. Arrange the sliced pears on top of the frangipane, drizzle with honey, and bake in the oven for about 45-50 minutes, or until golden brown and the filling is set.
- Cool the tart for a few minutes before removing from the pan. Dust with powdered sugar before serving warm or at room temperature.
Notes
You can customize the tart by adding spices like nutmeg or cardamom to the frangipane or by using different fruit toppings depending on preference.
