- 12 oz tortellini (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- ½ cup diced bell peppers (red or yellow)
- ¼ cup red onion, thinly sliced
- ½ cup mozzarella balls (bocconcini)
- ⅓ cup hot honey
- 3 tbsp olive oil
- Salt and pepper to taste
- Fresh basil leaves (optional)
Instructions
- Start by boiling a large pot of salted water. Add the tortellini and cook according to package instructions—usually around 3-5 minutes for fresh tortellini or longer for frozen.
- Once the tortellini is done cooking, drain and rinse it under cold water to stop the cooking process.
- In a large mixing bowl, combine the tortellini, cherry tomatoes, chopped spinach, bell peppers, red onion, and mozzarella balls.
- In a separate small bowl, whisk together the hot honey, olive oil, salt, and pepper.
- Pour this mixture over the pasta and veggies, tossing until everything is evenly coated.
- For a beautiful presentation, serve the salad in a large bowl or on individual plates, garnished with fresh basil leaves.
Notes
