  • ½ cup powdered sugar
  • ½ cup unsalted butter, chilled and cubed
  • 1 egg yolk
  • 23 tablespoons ice water
  • 1 cup ricotta cheese
  • ½ cup almond flour
  • ⅓ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • A pinch of salt
  • ½ teaspoon almond extract (optional)
  • ¼ cup sliced almonds for topping (optional)
  • Powdered sugar for dusting (special garnish)
  • Fresh berries for garnish (special garnish)

  • Instructions

  • In a large bowl, whisk together the flour and powdered sugar. Add the chilled butter cubes and mix until the mixture resembles coarse crumbs.
  • Stir in the egg yolk and add one tablespoon of ice water at a time until the dough just comes together.
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Roll out the dough on a lightly floured surface until it’s about 1/8 inch thick. Transfer it to a 9-inch tart pan.
  • In a bowl, combine the ricotta, almond flour, sugar, eggs, vanilla extract, lemon zest, and salt. Mix until smooth.
  • Pour the ricotta mixture into the tart shell and sprinkle sliced almonds on top if desired.
  • Bake for 30-35 minutes, or until the filling is set and the edges are golden brown.
  • Let the tart cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
