1 ¾ cups all-purpose flour
½ cup powdered sugar
½ cup unsalted butter, chilled and cubed
1 egg yolk
2–3 tablespoons ice water
1 cup ricotta cheese
½ cup almond flour
⅓ cup granulated sugar

Zest of 1 lemon
A pinch of salt

Instructions
In a large bowl, whisk together the flour and powdered sugar. Add the chilled butter cubes and mix until the mixture resembles coarse crumbs.
Stir in the egg yolk and add one tablespoon of ice water at a time until the dough just comes together.
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 350°F (175°C).
Roll out the dough on a lightly floured surface until it’s about 1/8 inch thick. Transfer it to a 9-inch tart pan.
In a bowl, combine the ricotta, almond flour, sugar, eggs, vanilla extract, lemon zest, and salt. Mix until smooth.

Bake for 30-35 minutes, or until the filling is set and the edges are golden brown.
