- 1/2 cup sugar
- 1/2 cup milk
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 2 cups fruit juice (orange or grape)
- 1 tbsp gelatin powder
- 1/4 cup sugar (for sweetness)
- 1 cup assorted fresh fruits (strawberries, blueberries, kiwi, or mandarin slices)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Whisk together the flour, sugar, baking powder, and a pinch of salt in a mixing bowl. In a separate bowl, combine the milk, eggs, and vanilla until well blended. Gradually mix the wet ingredients into the dry ingredients and stir until smooth.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Heat the fruit juice in a saucepan until warm but not boiling. Whisk in the gelatin and sugar until fully dissolved. Allow it to cool slightly before pouring over the cooled cake layer.
- Refrigerate until the jelly has set (about 2-3 hours). Carefully slice the cake into wedges and arrange the assorted fresh fruits on top.
Notes
For a tropical twist, try substituting the fruit juice with coconut water or add a splash of liqueur to the batter for an adult version.
