Ingredients
Scale
1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
1 can (14 oz) sweetened condensed milk
½ cup fresh key lime juice (or regular lime juice)
1 tablespoon lime zest
2 large eggs
Optional: a pinch of sea salt
Optional: shredded coconut for a tropical flair
Special garnish: fresh whipped cream
Special garnish: additional lime zest or thin lime slices
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine your graham cracker crumbs, sugar, and melted butter. Mix it well until the crumbs are fully coated and the mixture resembles wet sand. Press this mixture firmly into the bottom of a greased 9×9-inch baking pan.
Bake the crust in the preheated oven for about 10 minutes, or until golden.
While the crust is baking, whisk together the sweetened condensed milk, lime juice, lime zest, and eggs in a separate bowl until it’s smooth and creamy.
Pour the filling over the slightly cooled crust, spreading it out evenly.
Put the whole thing back in the oven and bake for an additional 15 to 20 minutes, until the filling is set but still a little wobbly in the center.
Once baked, remove it from the oven and let it cool on a wire rack. Transfer it to the fridge to chill for at least 2 hours.
When you're ready, cut those bars into squares and serve them chilled.
