4 cod fillets (about 6 oz. each)Juice and zest of 1 large lemon2 tablespoons olive oil1 tablespoon fresh parsley, chopped1 tablespoon fresh dill, chopped1 teaspoon garlic, minced1 cup breadcrumbs (preferably panko)1/2 cup grated Parmesan cheeseSalt and pepper to taste
Preheat your oven to 425°F (220°C).Pat the cod fillets dry with a paper towel and place them on a baking sheet lined with parchment paper.
