Ingredients

  • 4 cod fillets (about 6 oz. each)
  • Juice and zest of 1 large lemon
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon garlic, minced
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • Pat the cod fillets dry with a paper towel and place them on a baking sheet lined with parchment paper. Season lightly with salt and pepper.
  • In a bowl, mix together the olive oil, lemon juice, lemon zest, parsley, dill, and garlic.
  • Spread the herb mixture over the fillets.
  • In another bowl, combine breadcrumbs and Parmesan cheese. Add a pinch of salt and pepper.
  • Sprinkle the breadcrumb mixture on top of the coated cod fillets and press gently.
  • Bake for about 12-15 minutes or until the fish is flaky and the top is golden brown.
  • Serve immediately with extra lemon wedges.
