Ingredients

  • 8 large Eggs
  • 2 cups Shredded cheese (Cheddar or Monterey Jack)
  • 1 cup Bell peppers, diced
  • 1 medium Onion, diced
  • 1 cup Sausage or bacon, cooked and crumbled
  • 8 large Tortillas
  • Salt and pepper, to taste
  • Optional: Salsa, for serving

Instructions

  1. Start by gathering all your ingredients and preparing your workspace. Chop the bell peppers and onions into small pieces. Crumble the cooked sausage or bacon and set aside. In a large bowl, whisk the eggs and season them with salt and pepper.
  2. In a large non-stick skillet, heat a little oil over medium heat. Add the diced onions and bell peppers, sautéing until they are soft—about 5 minutes. Then, push the veggies to one side and pour in the whisked eggs. Allow them to cook slowly, stirring occasionally until they are fully set. Finally, fold in the crumbled sausage or bacon and half of the shredded cheese. Remove from heat and let it cool slightly.
  3. Lay out the tortillas on a clean surface. Spoon the egg mixture onto the center of each tortilla, being careful not to overfill. Sprinkle the remaining cheese on top before folding the sides and rolling up the burrito tightly. Repeat this process until all the filling is used.

Notes

Feel free to customize with additional ingredients like spinach, jalapeños, or black beans. Wrap each burrito in plastic wrap or foil to freeze.
