- Begin by cooking your pasta according to the package instructions. Aim for al dente for the best texture. Once done, drain it and set it aside, saving a cup of the pasta water for later.
- While the pasta cooks, season both sides of your chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board. Once slightly cooled, slice it into thin strips.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, toss in the halved cherry tomatoes and cook until they soften, usually around 2-3 minutes.
- Pour in the heavy cream and stir in the Italian seasoning. Let the mixture simmer on low heat for about 5-7 minutes until it thickens slightly. Stir in the Parmesan cheese until it melts into the sauce. If the sauce gets too thick, add some reserved pasta water to reach your desired consistency.
