- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Gather all your ingredients. In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and pepper. Whisk well.
- Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure they are well-coated and marinate for at least 1 hour.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the leftover marinade.
- Grill the chicken thighs skin side down for about 7-8 minutes until golden brown. Flip and grill for another 7-8 minutes until cooked through (internal temperature of 165°F).
- Remove the chicken from the grill and let it rest for about 5 minutes before serving.
- Serve with grilled vegetables or a Greek salad, garnished with fresh herbs and lemon wedges.
