  • 1/2 cup Mexican Street Corn Sauce
  • 1/2 cup Cotija Cheese, crumbled
  • 1 teaspoon Chili Powder
  • 1 Lime, juiced and zested
  • 1/4 cup Cilantro, chopped
  • Salt and Pepper, to taste

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Rinse the Brussels sprouts and trim the ends, removing any yellow or wilted leaves. Cut them in half lengthwise.
  • In a mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  • Spread the Brussels sprouts on a baking sheet in a single layer. Roast for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through for even cooking.
  • While the Brussels sprouts roast, mix together the mayonnaise, sour cream, lime juice, chili powder, and lime zest in a small bowl until well combined.
  • Once the Brussels sprouts are perfectly roasted, remove them from the oven and allow them to cool slightly. Drizzle the Mexican street corn sauce over the sprouts and toss to coat evenly.
  • Top with crumbled cotija cheese, chopped cilantro, and additional lime juice. Add your optional garnishes if desired.
