- 1 cup pecans, chopped
- 1/2 cup brown sugar
- 1/2 cup corn syrup
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Prepare mini pie crusts using store-bought or homemade.
- Combine the brown sugar, granulated sugar, corn syrup, melted butter, eggs, vanilla extract, and salt in a mixing bowl. Whisk until smooth, then fold in chopped pecans.
- Pour the filling into each mini pie crust, filling three-quarters full. Bake for 20-25 minutes or until set and lightly golden. Cool before serving.
Notes
Optional: Add cinnamon or nutmeg to the filling, or mix in chocolate chips for a twist. Serve with whipped cream or a drizzle of chocolate syrup.
